In our team “Advanced Technologies” at DIL German Institute of Food Technologies we are looking for a Master student (m/w/x) for completion of a
Master Thesis
on the topic: „Investigation of technologically functional properties of black soldier fly protein”

 

The project deal with the black soldier fly proteins' techno-functional qualities for their significance for food composition and ingredient replacement. The solubility, emulsification capacity and stability, foamability, gel formation, water-holding capacity, and oil-holding capacity of black soldier fly proteins will be investigated for their technological functionalities. The understanding of the techno-functional properties of the black soldier fly is important to promote their incorporation into a wide range of food and feed product.

Areas of responsibility
  • Applying insect protein analysis methodologies
  • Determine the BSF protein's biochemical and physicochemical characteristics
  • Plan for conducting experiments to improve extraction procedures
  • Analysis of the Research results
  • Preparing, recording, and delivering presentations to the team about the findings
Your profile
  • Holding a bachelor’s degree (or equivalent) in Food Science & Technology or related discipline
  • Insights in physical properties of food
  • Previous laboratory experience desired, Enjoy working in the lab
  • Very good knowledge of English and German
  • Good communication and presentation skills
  • Pleasure and interest in new products and technologies, in particular working with insects
  • Critical thinking and independent working skills
