Reduction of salt, fat ans sugar is emphasized
PLEASURE is a European project with in total 16 research institutions and enterprises. The idea is to identify and further develop opportunities of processing technologies which:
- allow the reduction of salt, unwanted fat, and sugar
- avoid or at least reduce the use of replacers like phosphates, gums and sweeteners
- achieve an optimized sensorial perception of the products
The DIL will be responsible for one out of a total of nine work packages. In this context, DIL will focus on meat products. The goal is to achieve an overall reduction of 15 to 30% of salt in meat products and the replacement of animal fats by plant oils. In order to realize this reduction, combined approaches will be followed.
