We offer a multi-facetted and demanding range of work in the area of 3D printing and food engineering. The aim is to investigate the potential of extrusion based 3D printing for the personalized production of foods. A materials sciences approach will be followed to tailor food structure in selected starch and protein based matrices. The work is embedded in a 3-year research project.
