Start of the research project: sterilization of blood from slaughtered animals
The German Institute of Food Technologies (DIL), Quakenbrück, together with the Institute for Food Quality and Safety of the Foundation of the University of Veterinary Medicine in Hanover (TiHo) and small and medium-sized enterprises from the meat industry is exploring new ways for sustainable utilization of offal, in particular of blood from slaughtered animals.
In Germany, about 150m liter blood from slaughtered animals have to be disposed of each year. This often involves an elaborate process. A utilization of this valuable material, which is rich in proteins and iron, as food would be desirable in particular from an ethical point of view and with regard to the growing shortage of raw materials for an increasing global population. Based on the ELCRACK® process for non-thermal sterilization developed at DIL, new processing and utilization strategies to be applied in the production of meat products shall be developed for a sustainable use of this raw material.
The research project (AiF 15885 N) is funded with 380,000 Euro by the German Federation of Industrial Research Associations (AiF) and the Research Group of the German Food Industry (FEI) and also supported by the German Association of the Meat Industry (VdF), the Federal Association of the German Meat Industry (BVDF) and the German Engineering Federation (VDMA).
